What is a cookie?

A cookie is a file containing a unique ID that is sent to your browser. This file is sent to the website everytime a new page is requested.  This helps a website improve the users experience by keeping track of how they navigate the website. They normally do not store any information that personally identifies a user, but it may be possible to link the information to personal inforation a company has.

What are cookies used for?

Cookies are typically used by websites when they want to know if your device has visited that website previously. Cookies on your device can then be used to help remember your preferences such as language or currency, help improve navigation between pages and generally improve your experience browsing the website.

Cookies are also used by companies to help understand how their website is being used. Google Analytics and other similar services use cookies to provide anonymous  data such as how long users in general spent on a website, which pages they visited and in which order for example.

They can also be used for online advertising, by aggregating the basic information cookies gather, informed guesses can be made about a users demographic and advertisements, such as web banners can be targeted to them. Esentially, when you visit a website about holidays or travel, it may store a cookie on your device, so the next website you visit will then contain advertisments about holidays that may be more relevant to you.
